Technically, that does not prove they're unset:
$ XDG_CONFIG_HOME=
$ echo $XDG_CONFIG_HOME
They most certainly are, but to really check whether a variable is unset
(so not even set to the empty string), I'd do
$ set | grep -e ^XDG_
XDG_CONFIG_HOME=
$
